Chalky mass-produced sweethearts and preservative-laced chocolates line the shelves for Valentine’s Day. But the holiday is meant to be a celebration, and the best celebrations toast in good health. So let’s ditch the refined sugar and welcome a healthy way to indulge!

If you’re craving rich, decadent, guilt-free chocolate, this recipe is for you. The main ingredients of this dessert are Medjool dates and cacao, which both offer amazing health benefits. The dates give a generous dose of bone-strengthening calcium, iron, and potassium, while the superfood cacao gives you mood-boosting antioxidants and magnesium. You can rest assured that you are nourishing those you love when serving these bite-size truffles.

Delicious? Check. Bite-size? Check. Nourishing? Check. All of the makings for a romantic, healthy, decadent date-filled Date Night. And, come on, who doesn’t love puns? :-)

Date Night Chocolate Truffles

16 ozs. raw Medjool dates pitted
...
½ cup raw unsweetened cacao powder or cocoa powder
...
1 tsp. vanilla
...
0 pinch sea salt
...
1 tsp. orange zest finely grated, or vanilla paste, or instant espresso powder as flavoring options

In a food processor, combine roughly chopped dates, cocoa powder, coconut, and salt until almost smooth. Add desired flavoring and pulse to combine.

Scoop the date puree by the tablespoonful and roll into 1” balls. Roll truffles in desired coatings to cover.

Keep truffles in an airtight container in the refrigerator. They are best enjoyed at room temperature.

These Date Night Truffles can be made 1 week ahead of time, and will last in the refrigerator for up to 2 weeks.
