Did that heavy rain keep anyone else up last week? Ususally, I find rain calming to sleep to but for some reason there are a few nights when the rain is pounding down on my sky lights, I can’t sleep. I found myself dragging my body out of bed to take my daughter to school and for me that is a depressing feeling.
I dragged myself right from bed to the vegetable drawer knowing nothing could spark my energy quite like veggie juice. After years as a nutritionist, I feel so in touch with my body and I literally felt better just looking at all the beautiful, colorful vegetables in front of me. My eyes perched right upon some gorgeous beets and I knew a beet juice was just what I needed.
My family doesn’t love broccoli stalks, so when we have broccoli for dinner I chop the stalks and store them for juice or soups. They are also surprisingly sweet and add a lot of flavor. I paired the beets and the broccoli stalks with my “juicing core”: kale, celery, lemon & ginger.
This juice was so YUM. Truly the minute it hit my mouth, I felt like oxygen and energy was flowing through me. After all these years, that feeling still amazes me.
