Farmers Salad


Do you ever struggle with trying to help your kids make healthy choices but to also not be the overbearing health nut? I’m planning a little birthday party for my youngest daughter and I had a feeling we wouldn’t agree on the menu. It’s sort of a summer BBQ feel and she just wants foods her 16-year-old friends won’t scoff at. I understand that.

I have been meaning to try this recipe from Kris Carr’s Crazy, Sexy, Kitchen and it seemed like a great healthy alternative to a potato salad that we could possibly serve at her party. I tested it out it last night for dinner with my family’s favorite recipe of hers, her vegan crab cakes. This salad was delicious! The whole family went crazy for the taste and my daughter had to admit that none of her friends could deny how yummy this salad was.

The potatoes and the aioli add such a tangy creaminess and the spicy greens paired with the dijon vinaigrette was just amazing. This also felt like a great recipe to share this week as on Monday I talked about how to smoothly add & enjoy fiber in your diet . This salad is fiber packed with the beans and the potatoes but is well-balanced with the greens and the bell pepper so it won’t be a shock to your sytem. Actually this salad is so well-rounded it would serve as a great total meal-in-one dish!

I hope you will think of this during the next few months when you’re either looking for a great lunch or dinner for yourself or you have guests coming over for a BBQ and you don’t want to mess up your clean-living life.

Farmer’s Salad

3 tbsp basic aioli (recipe below)
1 tbsp lemon zest
2 tbsp capers strained
1 tbsp chives minced, or green onions
1.50 tbsp tarragon coarsely chopped
3 cups baby potatoes boiled, cooled and sliced in half
2 cups watercress or baby arugula
1 cup fava beans or broad bean, gigantic white bean or lima bean
2 tbsp Dijon Vinaigrette (recipe below)
1 red bell pepper thinly sliced
black pepper freshly ground, to taste

Mix the aioli in a bowl with the lemon zest, capers, chives and tarragon. Toss the mixture with the boiled potatoes and set aside.

In another bowl, combine the watercress, beans and Dijon vinaigrette.

Place a portion of the potato salad at the center of a plate and top with the watercress mix. Top with red bell pepper slices and a finish with freshly ground black pepper and serve.

Basic Aioli

1 cup vegenaise or other vegan mayo
2 cloves garlic grated or minced
3 tbsp lemon zest
0 pinch sea salt
black pepper freshly cracked, to taste

In a bowl, whisk all ingredients until smooth.

Dijon Vinaigrette

¼ cup olive oil
3 tbsp agave
3 cloves garlic finely minced
black pepper freshly grounded, to taste

In a bowl, whisk all ingredients well.
