Cauliflower Rice Salad

This salad makes me so happy.

That is one of the great joys of eating clean and healthy. When your system is clouded with preservatives and toxins and other junk, your tastebuds don’t care about the incredible aspects of a salad such as this one. When you cleanse that stuff, you clear the way for the kind of excitement that can be incited by one delicious bite of a veggie-based perfection.

I love salads, but sometimes I get a little bored with them. So I am constantly trying to come up with new, fun recipes to keep me interested. I have a few aspects that make up a perfect salad in my world:

- Lots of crunch
- Lots of unique, flavor
- Can last a few days (so I can make it for the week!)

This salad mastered all three of those categories. I have had a few bland experiences with cauliflower rice before, but decided to give it another go. When you get it right, it’s an amazing experience.

Between the crunchy radishes, snap peas, sweet cherries, the lightness of the lemon and the freshness of the herbs, this salad had me at “Hello”.

Earlier this week I posted about how to Cleanse Your Liver. The idea with liver cleansing isn’t to just spend a few days purging all the bad stuff. Your liver really responds well to a consistent, clean, liver-supporting diet. This salad is the perfect addition.

Cauliflower Rice Salad

1 head cauliflower leaves removed and chopped
...
1 cup snap peas roughly chopped
...
1 cup radishes sliced
...
1 cup cherry tomatoes sliced in half
...
1.50 cups fresh parsley roughly chopped
...
½ cup fresh mint roughly chopped
...
0 1/3 cup extra virgin olive oil organic

Pulse cauliflower in food processor with slicer blade attached until it resembles rice. Spoon into a bowl.

Add all other ingredients except pumpkin seeds and mix well. Adjust seasonings as needed. Add more oil, lemon and/or salt and pepper if desired.

Sprinkle with pumpkin seeds and serve.
