Crunchy Chipotle Seed Salad

I’m always looking for a new, simple, and tasty lunch. I love a hearty salad, but I’m often looking for something with a kick to keep my engery high throughout the afternoon. Not only does this crunchy seed salad offer the benefits of protein, healthy fats, iron, vitamin C, and lycopene, it also packs a punch with spicy chipotle seasoning and zesty citrus. It’s quick and different, easy to take on-the-go, and even fun enough to serve for a shared lunch spread.

Crunchy Chipotle Seed Salad

1 cup pine nuts
...
1 cup tomatoes diced
...
1 cup radishes
...
2 stalks celery diced
...
2 cups kale thinly sliced
...
¼ cup hemp seeds
...
3 tbsp olive oil
...
1 clove garlic
...
salt to taste
...
pepper to taste
...
butter lettuce or romaine lettuce for wrapping

In a blender, combine pine nuts, olive oil, lemon juice, garlic, chipotle, and salt and pepper. Add water as needed to thin. Taste and adjust seasonings.

In a bowl, combine tomatoes, celery, kale, radishes, pumpkin seeds, and hemp seeds. Drizzle with chipotle dressing and mix well until combined. Serve salad wrapped in lettuce.
