Breakfast Boosting Acai & Granola Bowl


I am absolutely addicted to homemade granola. I eat it for breakfast with unsweetened vanilla almond milk and snack on it all day, tossed with dried goji berries. I recently was out to breakfast and had the most delicous and protein-packed acai bowl. It was sweet and indulgent and kept me full all day. In recent years, acai berries have made quite a name for themselves for being a health super-fruit. They are packed with antioxidants, fiber, and healthy fats, benefitting your heart and digestive system. I decided to attempt a homemade bowl so that I could top with my favorite homemade granola. It was incredibly delicious and my kids even liked it, noting that it tasted like dessert. I love that it’s a great and dairy-free alternative to a yogurt parfait so you’ll be left feeling energized instead of bloated.

Acai Bowl

Combine all ingredients in a blender until smooth.

Top with granola (recipe below), fresh berries and hemp seeds.

Heart Healthy Granola

3 cups old-fashioned oats organic, gluten-free
1 cup raw, sprouted nuts and seeds (walnuts, almonds, sunflower seeds)
1.50 tbsp coconut oil organic, or grapeseed oil
0 1/8 cup coconut sugar organic
½ tsp. cinnamon organic
0 1/6 cup maple syrup organic
½ tsp. pure vanilla extract organic

Preheat oven to 325 degrees.

Mix all dry ingredients in a big bowl.

Pour maple syrup, vanilla extract and oil over the ingredients and mix to coat evenly.

Spread the mixture onto an ungreased baking sheet. Put in the oven for 35 minutes, checking often.

Remove from the oven and let cool completely.

*Note: To make a crunchier, clumpier granola, you can add two beaten egg whites to the wet mixture.
